Peppermint Coconut Bombs

Mini muffin tin liners
Mini muffin tray
1/2 cup Coconut butter
1/3 cup agave nectar
1/2 tsp peppermint extract OR 1-2 drops pure peppermint essential oils
7 tbsp coconut oil
1/4 cup enjoy life chocolate chips allergy friendly
1/3 cup coconut oil
1 1/2 tbsp Agave nectar or maple syrup
1/4-1/2 tsp peppermint extract or 1 drop pure peppermint essential oil
Line mini-muffin tray with liners and set aside
Filling; In a medium saucepan combine coconut butter, coconut oil, agave nectar, and peppermint oil. Stir until smooth and divide evenly between muffin liners. Place in freezer to harden for 1 hour.
Make the chocolate layer by combining chocolate chips, coconut oil, agave syrup. Stir constantly over medium heat until smooth with no lumps. Turn off heat and add peppermint oil.
Remove muffin tin from freezer and spoon the chocolate mixture on the top.
Place back in freezer for 30 minutes, then transfer to storage container. Store in freezer until ready to eat.
